An experienced carver would
choose a tree to cut down to
provide wood for carving
during the winter months
when the sap was down and
so minimized the problem of
cracking after he had worked
it. The meat tray was carved
to be functional, but decorative at the same time.
The reason for the underside being decorated was because this was seen when the tray was hung while not in use.
